Pre-heat oven to 400 degrees.
Pillsbury pie crust- Cut out 3″ circles with a cookie cutter. Put on a cookie sheet atop some parchment paper. Press a rim around the edge about 1/8 of an inch and bake for a few minutes to prevent being soggy.
4 TBS butter, melted
1 c. pecans, chopped
2/3 c. brown sugar, packed
1/2 c. corn syrup
4 eggs
1/4 tsp. salt
Cook the above ingredients on top of the medium heated stove. Bring to a boil until thickened. If you cook too much, add tablespoon of Karo corn syrup to thin. Spoon a tablespoon of pecan pie filling in each pre cooked crust and return to the oven for 5-8 minutes. Remove from the oven and let set until cool. If you so choose, drizzle the chocolate lightly.
1/4 c. milk chocolate chips, melted for drizzled decoration
